Brie is a soft cow's milk cheese manufactured in France. Originally, it was made in and named after the French region of Brie, which is common day Seine-et-Marne. Today, Brie is made all over the world with a variety of different recipesr, wrapped in a white rind. The rind is moldy but edible, and often thought to be the best part of the cheese. Brie is good enough to enjoy on its own, but if you want to do something special with it, try an old classic. Take your wheel of Brie and wrap it in a sheet of puff pastry. Bake on a sheet pan until the center of the Brie is melted and the puff pastry is golden brown. Cut into the wheel as you would normally and enjoy. If you are looking for a wine pairing, Brie is wonderfully complimented by crisp white beverages; Chardonnay, Chablis or Champagne are all excellent choices.
